Oh, I have a great recipe! Crock pot or slow cook in the oven...

8 Pepperoncinis, rinse and take the seeds out
1/2 cup of black olives
1 chicken cut into 8 pieces (or 6-8 of your favorite chix piece)
6 cloves of garlic, minced
1/2 tsp paprika (optional)
1/3 cup lemon juice

Put first 2 ingredients and garlic on bottom of pan. Place chicken on top, sprinkle with paprika. Pour lemon juice over top. Cover and cook in crock pot on low setting for about 7 hours or on 300 degree oven for about 4 - 5 hours (use a thermometer to check for doneness). Put chicken on warm serving platter; skim and discard fat from dish. Blend in 1 1/2 TBS cornstarch mixed with 2 TBS cold water into chicken liquid. Put in small saucepan on top of stove until just thickened (only a couple/few minutes). Season to taste with salt and spoon over chicken.

This is super served over green and white fettucine. Serve it with some flavorful cheese, crusty bread and apples and grapes. It's unbelievably good! You will have leftovers, but they're great the second day too.

I kicked my own butt with a good one the other day. Thaw some boneless skinless breasts really well in the microwave, and then cook them most of the way. Slit them down the middle (but not all the way) to make a pocket and then stuff them with whatever you have. The first time I used crushed up bacon and bleu cheese. This time I used Wasabi mayonaise mixed up with crushed almonds. Then put an little of the stuffing on top for color, and bake for 5-10 more minutes to brown it a little and heat up the stuffing. The whole thing takes less than a half an hour, and chicks dig it!

The other night I made shish-kabobs and steaks on the grill! I just bought red and green peppers, onion, mushrooms and shrimp!....only takes a few minutes to cut the veggies and put them on skewers! If you use wood skewers soak them in water for a few minutes 1st! It was really good and only has to cook a little while on the grill!

Spaghetti & Meatballs, Green Salad, Garlic Bread
Cheesecake for Dessert
Iced Tea

Use the frozen meatballs, canned or bottled spaghetti sauce, bag of salad greens, bottled salad dressing and garlic bread that's already prepared (all you have to do is heat it up)
Thaw a frozen cheesecake and top with canned fruit pie filled (strawberry, cherry, blueberry etc.)
Use instant tea mix - all you add is water.)

Easy, simple, and very tasty!

Baked ziti.
Add meat (whatever you like- ground beef, ground sausage, or chicken) and green peppers to spaghetti sauce (can be store-brand)
Boil ziti. Stir a little sauce into it to get it moist.
Layer ziti, sauce, ricotta cheese, and mozzarella cheese in casserole dish and bake at 350 until cheese on top is melted.
Serve with salad & bread.
Very easy, very cheap, and very yummy!

Spice up a nice-sized, thick porterhouse steak with salt, pepper, garlic & herb seasoning and basil. Pan-fry it on medium-low heat flipping it every 2-3 minutes. After it starts to lightly brown turn the heat up to medium and continue as before until it's how you like it (I like mine mostly to medium rare).

Great sides are antepasto salad or potato salad.

How about beef tips over rice with fresh squeezed lemon juice and pineapple or petroleum jelly.
