Do I? No... (well sometimes) ... But ever since I found out that the practice came from an old religious belief that... the moment of the sneeze is when you become most susceptible to a demonic possession .... (and that is why people bless the person, to ward off evil spirits)... Uh, even though I am a Christian, I say "Gesundheit" (which is German for good health). It just makes more sense, and now saying "bless you" makes me laugh, and it's just not polite. :)

Anytime I notice anybody sneeze, I say "Bless You"
If somebody wants to get uptight about somebody 'blessing them' ... well ... my thoughts are they could probably use a few more blessings in their life. ;-)

Absolutely. Even if you're one of a dozen people nearby who say it simultaneously. In fact, it can be a good way to meet someone if you're single and looking. Unless, of course, you're in the spray zone (remember to always cover your nose and mouth to protect others from your phlegm projectiles).
