1/2 cup superfine sugar
2 tablespoons water
1/4 teaspoon grated nutmeg or ground cinnamon
1/4 teaspoon cream of tartar or 1/2 teaspoon lemon juice
1 1/2 cups pecan halves
Makes 1 1/2 Cups
Generously butter a shallow baking pan (preferably a 15 x 10 inch jelly-roll pan) and set aside. Have ready a long handled wooden spoon, a pastry brush, and a cup of water.
Combine the sugar, water, nutmeg or cinnamon, and cream of tartar or lemon juice in a 1-quart heavy saucepan or skillet and mix well. Place on medium-high heat and cook, stirring with the wooden spoon, until the sugar dissolves. Bring the syrup to a boil, cover the pan, and boil 3 minutes longer. Uncover the pan. Dip the pastry brush in the water and wash down the sides of the pan. Cook the syrup over high heat without stirring, but swirling the pan by the handle, for 2-3 minutes, or just until the syrup turns the color of lightly brewed tea.
Scatter the pecans over the syrup and stir quickly with the wooden spoon to cover the nuts with the liquid. Cook the syrup for 2 or 3 minutes longer or until it is golden brown and the nuts are lightly toasted. Immediately pour the nuts and syrup onto the baking pan. Working quickly, separate the pecans with a fork. Set the pan on a wire rack and cool the candy until hard, or at least an hour. Or place the pan on a wire rack and let the candy set in one layer, at least an hour. Break into pieces.
1/4 cup butter
1 pkg. (10 oz.) miniature marshmallows
6 cups of crisped rice cereal
1 cup M&M's® candy
You will also need:
12 5-oz size paper cups (wax lined works best)
12 ice cream sticks
Makes 12 Pops
Combine cereal and M&M's, set aside. In a large saucepan over medium heat, melt margarine and marshmallows together, stirring constantly.
Combine marshmallow mixture with cereal mixture and stir well. Mix completely until all cereal is coated. Spoon mixture into paper cups and press lightly to fill. Insert ice cream sticks into the center of the mixture and press again lightly with fingers. Cool. When et, tear off the paper cups, leaving just the pop and the stick.
As an alternative, you can also press half of the mixture into a 9x9 square baking pan and cool. Cut into squares. Serve!

Chocolate Peanut Butter Pie
You can use a ready made graham cracker crust- chocolate one if you want a heavy chocolate taste !
1large box of Chocolate Pudding/Pie Filling ( I prefer the kind you cook over the instant but either will work depending on how long you have0
2 TB peanut butter
Cool Whip
Make the pudding/pie filling
Warm the peanut butter in the microwave so that it is soft
Spread the peanut butter over the bottom of the crust, then add the pie filling and cool in frig with plastic wrap laying on top of pie filling ( this will keep the pie filling from getting that crusty stuff when removed!)
Just before you are ready to serve, cover wth cool whip and if you have the time, I like to put either dark chocolate shavings on top of chocolate sprinkles.

P.S. You can also use the new Jello White Chocolate Pudding/Pie Filling and The Chocolate Cool Whip adding strawberries on top! One the boys just came through and reminded me of that since we just had it this past weekend.

1 Large can of Delmont Slice Peaches, 1 stick of butter or margarine, 1 1/2 cups of granulated sugar, 1 1/2 teaspoon of vanilla flour, 1 1/2 teaspoon of cinnamon, 1/2 cup of brown sugar, 1 box of Pillsbury pie crust - follow the directions to make the pie crust.
Instructions:
Mix peaches and other ingredients in a large Dutch oven pot, and bring to a boil. Pour ingredients into a large casserole dish. Roll the pie-crust into 1 whole sheet to cover the dish, or cut into strips and place over the peach mixture. Preheat oven to 350 degrees. Cook until golden brown for about 1 hour.

1/2 cup chopped hazelnuts, toasted
2 cups whipping cream
2 round tablespoons sugar
24 store bought prepared meringue cookies, available in plastic tubs at your market
1/2 cup hazelnut chocolate spread (recommended: Nutella)
1/2 pint raspberries
Toast nuts in a small pan then cool.
Beat whipping cream and sugar until it forms soft peaks. Crush half of the meringues in a large food storage bag with the hazelnuts and then divide evenly among 4 small dessert cups. Place hazelnut chocolate spread in a medium bowl. Warm the spread in the microwave until loosened and smooth, test after 40 seconds on high. Stir and repeat, if necessary, until loose.
Divide berries evenly among dessert cups. Fold a small amount of whipped cream into hazelnut chocolate spread mixture until well combined. Fold in the remaining whipped cream. Divide the completed mixture among the cups and top each dessert cup with whole remaining meringues, 3 per cup.

1 teaspoon lemon juice, juice of 1 wedge
1 pint blackberries
1 pint lemon sorbet
8 Piroline cookies or other wafer style dessert cookie
In a small saucepan placed over moderate heat, combine water, sugar, star anise and lemon juice. Stir and cook until sugar dissolves and water comes to a bubble. Add blackberries and cook 30 seconds. Remove pan from heat and let stand a 1 or 2 minutes, stirring occasionally. Remove star anise. Scoop lemon sorbet into 4 small dessert cups. Top lemon sorbet with star anise and blackberries and garnish desserts with 2 Piroline cookies or dessert wafers.
^THIS ONE's GREAT BECUASE IT ONLY TAKES ABOUT 10- OR 12 MINUTES- SO ITS QUICK. ESPECIALLY GOOD FOR PARTIES- MAKE IT FRESH RIGHT B4 AND THEN PUT IT IN THE FREEZER OR SMOETHING. :)

I made small strawberry deserts last night. Simple and yummy!! I took those small cakes ($1.00 for 6 at WalMart) sliced up fresh strawberries, put strawberry glaze over them and sprayed a little whip creme on top. Pretty, light, perfect for the season, cheap, and did not consume lots of time. :) Makes it possible to enjoy your company more :) You could also give it an ellegant look by crumbling the cakes and layering these ingredients in stem glasses.
