LISBON CODFISH BALLS

1 lb. salt codfish
3 med. potatoes, diced
1 sm. onion, chopped
1 tsp. parsley
Dash of pepper
Dash of nutmeg
3 egg yolks
3 egg whites
Olive oil

Soak cod overnight in cold water. Drain, rinse in fresh cold water and drain again. Then place potatoes and fish in saucepan, cover with water, cook until potatoes are tender. Drain and mash potatoes and fish. Add parsley, pepper, nutmeg, and blend in slightly beaten egg yolks. Beat egg whites until stiff, fold into mixture. Drop the codfish mixture into 2 inches of heated olive oil by a well rounded teaspoon (do not crowd) until golden brown. Keep warm on paper towel lined heat proof dish.

OVEN - FRIED FISH

20 oz. white fish fillets (4 5-oz. pieces)
1/2 c. low-fat buttermilk
1/2 c. Melba toast crumbs
Vegetable coating spray
1 tsp. paprika
2 tbsp. fresh parsley, minced

Put buttermilk in a shallow bowl. Mix crumbs, parsley and paprika and put in a shallow bowl. Dip fish fillets in buttermilk, then in crumb mixture. Place on a baking sheet that has been sprayed with vegetable coating spray. Bake at 450 degrees for 12 minutes or until fish flakes easily. Makes 4 servings, 149 calories each.

MR. LIMPET'S FISH TACOS

Organic corn tortillas
Orange roughy fish
Mayonnaise
Lettuce (head, Romaine)
Tomato
Oil (canola)
Organic refried beans

Cook tortillas in 3 tablespoons of hot oil, fold over to make taco shell. Drain off on paper towel. Cook fish in corningware dish with a little butter, in hot 350 degree oven about 20 minutes. Spread mayonnaise inside taco shells. Remember to warm the beans. Place beans, fish, lettuce (shredded), chopped tomatoes inside taco shells. Top with sour cream and guacamole.

FLOUNDER STUFFED WITH CRAB AND SPINACH

Approximately 1 lb. flounder (4 nice pieces)
1/2 bag fresh spinach
1 can crab legs or fresh crabmeat
1/2 stick cheddar cheese (4 oz.)
Garlic salt
Pepper
Paprika
Oregano
Butter

Preheat oven to 375 degrees. Drain crabmeat, rinse with water and squeeze 1/2 lemon on top. Clean, de-stem and slightly chop spinach. Grate the cheese, then melt 1-2 tablespoons butter in saute pan. Add spinach and cook until melted. Season to taste with garlic, pepper and oregano. Add crabmeat and cook until heated thoroughly. Let mixture cool slightly and then add grated cheese. Stir enough to be able to mold mixture when needed. Set aside.
Take cookie sheet or other flat pan with sides. Place 2-3 tablespoons butter on pan and allow to melt in oven. Pull out pan and rub both sides of flounder in butter. Line up flounder next to each other, skin side up in pan. Divide spinach mixture into four mounds and place mound in middle of each flounder. Wrap both ends of flounder up to fit snugly around stuffing then turn the whole thing upside down so that the ends are on the baking sheet. Place dabs of butter and sprinkle paprika on top of each piece. Bake at 375 degrees for approximately 20 minutes. Check at 15 minutes. Fish is done when it is white and flakes easily when pried with a fork.

Last night I had some fish at a local restraunt it was great so I will share it with you. First take your favorite white fish (Cod, Flounder, Grouper...etc) They used grouper. Lightly salt and pepper the fish and cook in some olive oil (not deep fry) in a pan. Then add some crabmeat on top by breaking small pieces an placing all over the top. Add Hollindaise sauce on top of the fish and crab. and finally add two long pieces of asparagus (cooked) in the shape of a X and serve. They called it Grouper Oscar. I loved it.

wont say its my best but summer here so try this-buy some tuna steaks-make a terriaki sauce-dont buy one most use corn syrup not honey-marinate tuna in sauce and grill-if serve rare it will be red inside with a beef flavor and texture just real tender-have been told before it was the best steak they had ever had-lol-to make sauce-honey and soy sauce in equal proportions-add black pepper garlic and dash of hot sauce-think you will enjoy it-chef for living-keep the peace old hippie

SALMON STEAKS ON THE BBQ
grill salmon steaks with a dash of dill or sprigs of fresh dill and cadjon spice over mesquite serve with lemon.

* some people prefer ceder or alder. and some like fruit woods like cherry or apple for there smoke.

BROILED DILL SALMON

Ingredients:

½ cup melted butter or olive oil
2 tsp. lemon juice
1 tsp. salt
1 tbsp. fresh dill chopped
1/8 tsp. red pepper
4 salmon steaks, cut 1 inch thick (about 2 pounds)

Preparation:

1. Place melted butter, lemon juice, salt, fresh chopped dill and red pepper in small bowl and stir to combine.
2. Preheat broiler.
3. Place salmon steaks on lightly greased pan and brush with half of seasoned butter.
4. Broil, 5 inches from source of heat, 5 to 10 minutes.
5. Turn heat to 400°F, close oven and bake an additional 5 - 8 minutes.
6. Brush with remaining butter blend. Serve.

1 large white fish fillet (dolphin, snapper)
Salt and pepper to taste
1 medium sweet pepper
1 large garlic clove
1 medium onion, sliced into rings
1¼ cup Nellie & Joe’s Key West Lime Juice
4 tablespoons olive oil
1 tablespoon cider vinegar
1 bay leaf
1 teaspoon oregano
Paprika
Clean and score fish. Place fish in large baking pan and sprinkle with salt and pepper. Place onion rings on top of fish. Mix together oil, vinegar and Nellie & Joe’s Key West Lime Juice and pour over all. Place bay leaf in center of fish. Lightly sprinkle oregano and paprika over surface of fish. Bake at 350º degrees.

well use salmon get your grill ready put the salmon in tin foil but make it like a bowl add beer salt pepper garlic wrap up put on the grill and it will taste great
