zesty chicken tortillas

1/2 cup MIRACLE WHIP Dressing
1/2 cup flour
3 cups milk
1 pkg. (8 oz.) Shredded Cheddar Cheese, divided
1-1/2 lb. boneless skinless chicken breasts, cooked, cut into 1-inch pieces
1/2 Salsa
1/2 cup chopped fresh parsley
16 Flour Tortillas



PREHEAT oven to 375°F. Mix dressing and flour in medium saucepan with wire whisk until well blended. Gradually add milk, stirring until well blended. Cook and stir on medium heat until sauce comes to a boil and thickens. Stir in half of the cheese. Reserve 1 cup of the prepared sauce.
ADD chicken, salsa and parsley to remaining sauce; stir until well blended. Spoon 1/3 cup of the sauce mixture down center of each tortilla; roll up. Place 8 of the roll-ups, seam sides down, in each of two (11x8-inch) baking dishes; top evenly with reserved sauce and remaining cheese.
BAKE 25 min.

Homemade Chicken Pot Pie

3 Large Pieces of Skinless,boneless, chicken breast
1 Can of Cream of Celery
1 Can/frozen sweet Corn
1 Can/frozen sweet peas
1 Jar of Chicken gravy-any brand
1 Ready to bake pie crust

boil chicken pieces/ drain
cut up chicken
add to 9" pie plate
add corn/peas
add cream of celery / gravy
top with pie crust, pinch edges
bake at 375 degrees for 30 mins or until crust is golden brown

you can add any vegtables you want,
I like to make a side of Instant potates,, yummy!!

I saute 1) onion in olive oil and kosher salt, then add (2) fresh tomatoes chopped (not diced) and Italian seasonings, let that simmer while saute 1 lb small shrimp in blackening seasoning, add to sauce, then prepare some pasta (of choice), top the pasta with the tomato sauce with shrimp, serve with bread

it's fast and easy - the freshness of the produce is key here, if you can get vine ripe tom. it is much better - no brainer

Chicken Patty Casserole (not made with chicken patties)


2 Boxes of Chicken Stove Top

2 C Sour Cream (large container, I prefer Superior)

2 Cans Cream of Chicken Soup (I prefer Campbells)

3-4 Boneless Skinless Chicken Breast



Boil chicken until cooked thoroughly. Preheat oven to 375. In a large bowl prepare both boxes of Stove Top as directed on package, mix well (I use microwave instructions, and cook it for half the time the box says--you do not need to cook it at all). In a separate bowl mix sour cream and chicken soup until well blended. Tear up or shred chicken breasts and add chicken pieces to sour cream/soup mixture, mix well. Spray 13x9 casserole dish with non-stick cooking spray. Spread half of stuffing mixture evenly in dish. Pour all of sour cream/soup/chicken mixture in pan, spread evenly across. Top with remaining stuffing mixture, and spread evenly across. Cover with foil and bake at 375 for 30 minutes. Remove foil cover and bake another 10 minutes. Remove from oven and allow to sit to thicken several minutes before serving. Enjoy!!!

banana cream crunch

6 sliced bananas, cool whip, walnuts, banana flavored pudding and cookie crunch (see below)

to make cookie crunch take 1/2 cup brown sugar, 1 cup flour and mix together, cut in 1 stick of butter and bake at 350 for 15 minutes. Place in fridge for at least 4 hours to cool before adding to recipe.

layer sliced bananas, prepared pudding, cool whip and cookie crunch until you run out of ingredients. On the top put cool whip and sprinkle with walnuts.
