I'm staying at my boyfriends house while his mum is away and I want to cook him a nice simple meal. It cannot contain and 'rabbit food' [salad] or any vegetables..which obviously limits the variety! It also can't contain mushrooms as he doesn't like them. Any ideas would be very much appreciated! =)

There's steak or... simple and easy chicken and potatoes!!

Get some fresh chicken breasts, cut it up. Coat it with an egg/water mixture, roll in seasoned bread crumbs and bake 30 minutes at 325 degrees.

If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.

While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a microwave safe bowl, add 2 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with saran wrap or waxed paper, microwave on high for 8 minutes.

When the potatoes are done (fork should slide easily into it), carefully drain the water. If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk, a gob of butter and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.

If you want veggies, add some tinned veggies or now that its almost summer, how about fresh corn on the cob?

Beer-Can Chicken

2 whole dried chiles, such as chipotle or New Mexico
2 tablespoons sugar
1 tablespoon salt
1 tablespoon ground cumin
1 tablespoon oregano
1 tablespoon ground cinnamon
1 3 1/2- to 4-pound whole chicken
1 12-ounce can of beer

In a blender, food processor, or spice grinder, combine the chiles, sugar, salt, and spices.

Remove the neck and giblets from the chicken and discard. Rub the chicken inside and out with the spice rub. Cover with plastic wrap and refrigerate at least 4 hours or overnight.

Light a charcoal grill and allow the coals to burn until covered with gray ash or heat a gas grill to medium. Drink half the beer; leave the other half in the can. Slide the chicken over the can and place in the center of the cooking grate, balancing the chicken on its two legs and the can, like a tripod. Cover grill.

Grill about 1 1/4 hours or until an instant-read thermometer registers 170° F inserted in the breast and 180° F in the thigh, or until the juices run clear. Carefully remove the chicken and hot can from grill. Let the chicken rest 10 minutes before lifting it from the can.

He sounds spoiled. No vegetables?

You need to find a boyfriend that will appreciate anything you put in front of him.

Anyway, start out with a nice penne pasta with a bolognese sauce (tomatos and ground beef).

Then a steak or chicken breast, with polenta.

grilled chicken marinated in garlic and lemon then coated with dried italian herbs and salt & pepper.. side dish roasted potatoes also coated with the herbs and and seasoning but mixed with oil to make the potatoes crunchy on the outside, soft in the inside.. about 300F for 30-45min, or until golden brown (both the potatoes and the chicken can go together, just check them regularly to prevent them from burning, you can use a broiler or an oven).. hope he likes it if you're gonna try it!

Steak cooked in soy sauce and balsamic vinegar with a few peppercorns thrown in is really nice. Serve it with mash and drizzle the soy and balsamic sauce over it. He should like it - very masculine food!
