Its soured cream, given a sharp taste by citric acid, essentially lemon juice. Its not actually sour as in "gone bad". By law all food has a sell by date, but also the food industry does research to find out how long food can be stored for - so you will usually find a "Best before date as well"

It's been soured by a specific bacterium which produces lactic acid and may sometimes be still alive, though it has usually been pasteurised. I'm not sure what happens if you leave it - probably an acid cheese something like Caerphilly.

'Sour' and 'bad' are two quite different things, as you will know if you have ever left milk out for a week.

Because its like normal cream with lemon in it, now cream that has gone sour!

because it can go bad and....well,I was gonna say sour,but it's already sour...so I don't know what'll happen if it goes bad.We always eat it before then.
