The best organization I've seen for humanitarian work in other countries is called Global Volunteer Network. Here you can select a number of countries as a potential destination, and subsequently choose an appropriate program. You're required to pay a fee for most, but it allows you to not worry about anything but the flight to and from. The website for this organization is listed below:

it depends on the work. My friends sister went to work in China for a year as a missionary in one of their orphanages. She went through the church. Are you religious, maybe ask your Pastor/Vicar/Priest, or, funnily enough(and not being sarky) ask at your local jobcentre, they actually offer work abroad too. You could also call in to your library see if they have info, or while you're on here check the web, see what it throws up. Good Luck.
