OK, I'm going to tackle these one at a time.
Of course flu viruses evolve. We have observed that. It's called micro-evolution. What we haven't observed is the evolution between species. That's called macro-evolution.
Earthquakes don't 'prove' plate tectonics, but that is the best theory that we have. It is a very good theory and covers all the facts. But if you believe in the bible, then you believe in Noah's flood. During such a cataclysmic event, the earth's plates could have moved much quicker than we now observe them. This would mean that plat tectonics doesn't necessarily need that the earth is as old as some people say.
The dates of fossils is extremely shady. They use the carbon dating system, even though tests have shown that under many circumstances, the sample will lose carbon faster than projected. Such as when it is submerged underwater for a long period of time. And check out the book of Job. The 'Leviathan' and the 'Behemoth' sound remarkably like dinosaurs.
Why can't you believe in gravity? You can see it's effects, can't you? Perhaps science has not come up with the right reasons for its existence, but you can certainly see that it exists.
I am reasonably certain that the earth is round. Unless the people of the last 2500 years are hoodwinking me, the earth is round. Why are you so against theories? Sure they might not be true, that's why we can't put absolute faith in them. That's why we need to put our faith in God.

ok first of all the Bible flat out states that God created the heaven and the earth and everything in them so therfore the earth was created and we have no clue how much time was spent between creation and man walking the earth. simply because time didnt exist then. time came into existance when adam and eve ate of the forbiddan fruit. so how long was that we dont know. so dinosaurs existed and God created them when he made the earth. the only way that we would be able to live on this planet if it really was as old as the bible says then it would still be to hot to substain life. unless of corse God created it cool enough that life could exist. gravity is an elusive force that we can in some ways control. and ironicly everything has a gravitational pull even people. the earth isnt round or flat its more of a pear shape with the area south of the equator bulging out farther then the area north. as far as the flu viruses they evolve for two reasons 1)because the medication is giving them more and more immunities. and 2) because everything on earth evolves but it is more of a mutation. if you believe in the Bible then you know that we all came from the same two people that branched out and then was diminished done two eight people and then branched out again so how come we all look differant from each other. even twins have there own differances in looks and such. its not evolve but mutate get your words correct.

The earth has proven to be round... Im a christian and theres no reason you cant believe in earthquakes or tectonic plates... how old are tectonic plates? What position were they in when God Created the world? Engineers today build structures to allow for movement as this makes them stronger why would God not do the same with the world?
Dinosaurs are aged by flawed Carbon dating that has been proven to have many flaws and exceptions but is still used as fact. The Bible speaks of creatures that could have been dinosaurs, speciffically the leviathon and the behomath.
In all truth flu viruses don't evolve.. they adapt despite been stronger and having different immunitys they are still flu virues and will always be... they will nevr become monkeys or puppies or humans they will always be flu virues. All creatures possess the ability to adapt. Its just evolution the church challanges when one thing becomes another, with a different set of Chromozones.

Uh...the earth is spherical. Fact, not theory. Ummm..dinos are mentioned in the Bible. Plate tetonics are proven by the Bible..uh Super continant..Genesis 1..all the land was gathered into "one place". Science just in the last few decades has confirmed this. Flu viruses MUTATE...they don't evolve...at least I've never seen one...I know someone who named their dog Floo (Puppy had allergies and sneezed alot) but he was always a dog...wasn't a virus that evolved into a dog...that would be proof of evolution now wouldn't it...ya think? And you can believe in gravity..its mentioned several places in the Bible as a matter of fact I think its Paul that heals a man or raises him from the dead after he "falls" out of a window or off a ledge or something...yeah...gotta look that one up. So..what you need here is not just a bible but a darn good dictionary...cuz ya see...SCIENCE isn't a theory...science is a term that comes from some latin root word that means "to know". Okay...oh and that Dino reference...its in the Book of Job...you might want to read the WHOLE thing cuz then you will see that Job also mentions that the earth is round and hangs in space, the revolution of rain, the paths of electricity, currents under the ocean and of course that the ocean is deep. I know I am not going to convinse you, but this question looks fun to answer so I will.
First of all, I kind of believe in evolution, but I believe in it in a different way then you do. See all animals have the ability to adapt to things. It's not exactly evolving, but adapting instead.
With this being said, no 1 creaure can not evolve into another one.and still itself exsist. So yes, man could have evolved (adapted) from cave man, but not from apes.
Now where in the Bible does it give a date when the Earth was created. I've red it many times and still have not seen a date. Even with that being said I do not believe in the Bible. I think it was written by man. Even though it's based on truth it is inacurate, but I will still use the bible to answer your questions.
Dinosaurs, this is fun. First you have to understand that Gods time and our time is 2 diffent things. Yes, we consider Sunday Gods 7th day, but this is wrong (it's just a metaphore). See a day in Gods world can be 10,000 yrs. in mans. So, this can explain dinosaurs.
Lastly there is nothing saying you can not believe in theories. Yes, they are probable guesses; that doesn't mean they can't be true. God never said there is no gravity or the world is not round.

I'm guessing that your goal here is to point out that "accepted science" and "The Bible" disagree on a few major points. Well congratulations, you have done just that.
Woe be unto the folks who cannot resolve these issues to their own satisfaction without resorting to "herd" mentality. If you think you demonstrate faith by disbelieving your science book then you are just stupid. Drop out of school and get a job at McDonalds now and save yourself some time. If you can believe both 'The Bible' and 'Origin of the Species' at the same time, then I salute you, for I cannot. Science... the belief in Science as a way to peer into the dark, is mankind's only hope to achieve some sort of salvation. We surely cannot exist forever as a species unless we develop the technology to get off this world and sew our seeds in the stars, and sooner better than later. It's really a damn shame that we are caught up in so many stupid petty problems like oil, immigration, gays, and war that we may never work together as one species and solve our common problem: All Our Eggs Are In One Basket. This planet Earth is all that there is of HUMANITY in the whole entire universe... If it goes, we all go. All of us, and every memory that we ever existed would be gone for good if say a medium to large sized asteroid came and slammed us into extinction. We should all be working together the way ants work together to spread ourselves far and wide into the galaxy as far as we can so our entire existence won't be destroyed utterly by one random cosmic event. Alas.

Flu viruses don't evolve they mutate.
Earthquakes are mentioned in the Bible but not their cause.
Gravity is still theory - you can see it working but they still can't explain it.
The Earth is round - go in space and have a look.
The fossil record is dated this way: We know the fossil is X years old because of the age of the rock it was found in. We know the age of the rock because of the age of the fossil found in it. Circular reasoning.

You can believe anything you want, the Bible does not address those things directly. Most Christains aren't as opposed to science as you may be thinking. I'm a Christain, and I'm sure the earth is round.
