If it's Iraq rather than just active duty you're worried about, pick jobs carefully & start by looking in the Air National Guard, USAF/Navy Res. Many fewer specialties in those services are being deployed & generally for much shorter periods of time (as short as 60days) to much safer conditions. If you're worried about active duty cause you're in school or something, I can tell you. It's pretty fair bet you'll see some period of active duty every couple years, again some MOS's are better for that then others. Have your recruiter(s) hook you up with res/guard guys in those jobs and ask those questions.

National Guard Reserves? I assume that you mean either the National Guard OR the Reserves.
You chance of going are just as good as not going. Not the answer you're looking for, I know, but it's the truth. I spent 20 years in the Army (Active), and we never sent to any hostile environment.
I would "guesstimate" that your chances of going are 75%.
