fresh always coz the canned kind tends too make the pizza soggy. But shitake mushrooms are the best.

I always use canned. The fresh have a lot of moisture and will make the top of you pizza soggy. If you saute them first, they are good on pizza, but the canned ones are very good too.

i don't like mushrooms, allergic, but fresh are always better than canned anything!!!
