... if you ask for example: "Do you like this music?" and you get as an answer: "Yes" instead of "Yes, I do", or "No", instead of "No, I don't"? I mean, do you think it is necessary to say "Yes, I do"? Is it rude to say just "Yes". How does the difference FEEL to a native speaker (which obviously, I am not).

I do feel that an answer like 'Yes' or 'No', if spoken by a native speaker, seems to imply 'I'm not very interested in your question and am just answering because I'm required to'. I wouldn't ask any follow-up questions. I'd assume that the person doesn't want to talk about it.

I can't explain why I would feel that way, but it's true.

try asking a question that can't be answered by a simple yes or no. Instead of "do you like this music?" try asking "what music do you like?" Some people don't realize that you want them to go on about something if you just asked them a simple "do you or do you not" type of question. So just think about how you word the question next time. Nobody will answer a "What, who, where, why, or how" question with a yes or no.

A plain "yes" or "no" adequetly answers the question and nothing further is needed. An explanation, however, would be nice such as "yes I like the rhythm and counter melody". Saying "yes I do" is a bit redundant.

Good one, to others saying "Yes I do" instead of just yes shows that they are paying more attention to who is asking the question and if you just say "Yes", he might be half asleep, the same thing goes for "No" and "No I don't"
When I say "he may be half asleep", I mean he isn't paying much attention to who he is talking to.

No, it wouldn't feel rude to me, but might prompt me to ask more questions, especially if the answer was no.
