I asked my mom ( a mother in law herself) and she said flowers are always the way to go. something colorful. have them delivered (its more special) and when you know that they've arrived, just call to say "hello" and she'll say "oooh I got your flowers!"
works every time.
A gift certificate to her favorite restaurant is also something useful.

maybe something for her kitchen...i dont know like a new dinnerware or something of that sort. appliances too like grills, or a rotisserie...well thats if she likes to cook...
