Put the eggs in a pot in cold water, enough to cover the eggs. Bring to a boil, turn off and cover for 17 minutes. Run under cold water.

You might add green onions to your recipe and/or celery.

Hello,
I make tuna and egg salads often. Get the salted water to a rolling boil. The eggs have been sitting out for about 20 minutes to take the chill off of them. This keeps them from cracking when you add them to the boiling water. Boil the eggs for 15 minutes, they will be perfect for any salad or deviled eggs.
The salt added to the water will make it easier to peel the eggs.
Crack the eggs to create an opening. Use a spoon to remove the shell. Place the head of the spoon, curved side down, into
the cracked egg. Move the spoon in a upward motion and around the egg. Sometimes I get the shell off and it's almost whole.
KICK IT UP A NOTCH !
You may add salt, pepper, onion, a little dill weed, yellow mustard, celery, or tomato. These ingredients are very good in salads! Experiment with other flavors you like, It's fun !

There are two problems you'll want to avoid: cracked shells and the ugly green layer that can form around the yolk. For perfect cooking, start with eggs that don't have any visible cracks.Bring your eggs to room temperature before cooking. If the egg has been stored in the refrigerator it can be warmed gently under a flowing hot tap water. By bringing the eggs to room temperature, they're much less likely to crack in the hot water. Also the temperature of the egg at the start of the cooking process will affect the cooking time. An egg that is at room temperature at the start of the cooking process will require about 1 minute less cooking time than eggs taken directly from the refrigerator.
In case small cracks do develop, add salt to the cooking water. The salt will help to speed up the denaturing of the egg white, causing less of it to feather into the water. Use at least a tablespoon of table salt per two quarts of water.Place them in a single layer in a pan with enough cold water to cover eggs completely (approximately by 1 1/2 inches). Bring the water to a boil, remove from heat, cover tightly with a lid, and allow to remain in the water approximately 15 to 20 minutes. Watch the time when cooking the eggs carefully. Overcook causes a green layer to form around the yolk. This layer is caused by a reaction between the iron in the yolk and the sulfur in the white. Heat speeds up this reaction, so the longer your eggs cook, the greater the chance of discoloration. Then done cooking, place under running, cold water to cool quickly. This way of cooking is also known as "coddling." It does not toughen the whites as boiling does. This will also assist with the peeling process, as the cold water creates steam between the egg white and the shell which makes the shell easier to remove.

actually you shouldn't boil hard boiled eggs. Boiling them makes the yokes turn greenish. You should bring the water to a boil then turn down the heat cover and simmer for 15 min this way the yolks stay nice and yellow. Add some chopped onion and a little chopped celery for a nice salad.

If you want a soft boiled egg, then boil it 3 1/2 mins. Are you mixing the tuna and egg together?. Use mayonnaise, chopped green onion, and a pinch of horse radish, salt and pepper to taste

The KEY thing to having the perfect boiled egg is.....

VINEGAR in the water.

Adding eggs to cold water in the pot, or boiling water in the pot.. it's all the same. Adding VINEGAR to the water will prevent the whole egg leaking out if a crack should occur in the shell.

And, 8.5 minutes is the IDEAL time for a hard boiled egg that will be a prime ingredient in say... Tuna Salads...

**Enjoy!!**

Good luck

Start eggs in cold water so they don't crack. Slowly bring to a boil. When the water reaches a full boil, remove pot from burner. Turn off burner. Set pot aside for 20 minutes. Eggs will be boiled just right.

Eggs are good keepers even raw as long as you keep them in the fridge, hard boiled they keep well as long as you don't peel them until you are ready to use them. A couple of weeks. A day will not hurt them. I 've had hard boiled eggs in the fridge for aout 2 weeks and they were fine and NEVER made me sick.
