Check out seatguru.com. This is a wonderful site for airline seats & amenities (like there are any left).

Cathay Pacific is not so good if you are 6'1'' - seats are tight (although good service and entertainment). I prefer Singapore Airlines, Emirates or Qantas - all three should have personal screens with entertainment on demand. Try and get an exit row and you'll be able to stretch out.
If you are flying business class then you should be fine on most airlines.

Lufthansa (German Airlines), is definitely a really good airline especially in terms of reliability and employee quality. It is the best airline I've ever ridden to a European country. I don't exactly remember all its on-board facilities (it doesn't have individual screens on the backs of chairs for sure, but since you're 6'1", you're pretty tall, so you can easily see the screens that they have all around the airplane), and as for being squished in your seat, I doubt it. Lufthansa's prices are a little higher compared to other airlines, but if you book really far in advance, you can get reasonably-priced tickets.

Talking about "safe airlines," as I mentioned before, Lufthansa is one of the most safe airlines I know of.

My brother is 6 foot 4 and we have been back and forth Adelaide to London lots. Malaysian Airlines was the best, more room (we thought) than Qantas, BA, Singapore, and the service and food was better (we went economy and it was fine, plus we had the screens in the back of the seat in front with lots of music, films and games)

Qantas is one of the safe airline. I flew cathay pacific the first time to UK I hate it the second time I flew the Malaysian air line I enjoy their flight more the people were really nice.

Qantas, business class is great. Forget their coach, it looked very tight.

If price is not a big factor, then fly Lufthansa or Swiss.
