I think canned Ro-tel tomatoes (the diced tomatoes with the green chiles in them) are just about the best thing invented. I'm always coming up with new things to put them in. Any ideas?

Try thse Fiesta Corn and Mexican Macaroni and Tomatoes

2 cans whole kernal sweet corn
1 8 oz. pkg of cream cheese
1 can Ro-tel

Cook your corn like normal, drain, add cream cheese until melted. Watch closely it can burn. Then add your ro-tel (drained).
Cook for a just a little bit longer. I promise you will love it if you like corn.

Mac and tom.

Boil 2 cups of elbow macaroni, drain, add 1 can tomatoe sauce, 1 can drained Ro-tel. Makes for a great lunch when its cold out.

Put Ro-tel in a blender with stewed tomatoes, season with garlic powder, salt and pepper to taste. Great Salsa

Cook Ro-tel with canned chicken breast, cook until all liquid is gone. Get a fresh skillet, spray with non-stick spray, add a tortilla, add a scoop of chicken/ro-tel, add cheese, fold over the tortilla and brown both sides. Easy quesadillas.

They're fine, but I won't pay a premium for them. When possible, I get Albertson's diced tomatoes w/ green chilis. Cheaper and I think just as good.

I make my chili with them and taco seasoning. I also make a sort of baked beans with not very much sweetening (molasses) and tomatoes w/ chilis. (I live in Montana, and anything more than mild is often dismissed as "TOO HOT!"

This rules

2 cans black beans with juice
1 can rotel
1 each: red and green pepper, diced
1 medium red onion, diced
4 to 6 cloves garlic
1 tablespoon each: cumin, paprika, garlic powder, onion powder, parsley, chili powder
salt and pepper
crushed red pepper flakes
water....eyeball it

Heat some oil, add all veggies and garlic and saute for 10, add everything else, simmer for 2 hours......this rocks, seriously. If you cook it long enough you can use it for nacho topping and add soem pepper jack and bake.....really this is good.

I've used them in everything like shrimp salad, creole, gumbo, cucumber&tomato salad, spagetti sauce, tacos & burritos, mexican cornbread, stewed chicken, pork meals......My list could go on & on!! I'm from south mississippi & my family loves to cook!! My ex-husband is an awesome cook also!! That's where I get alot of my idea's!!
