Or try this salad recipe:
6 peaches, sliced 1/3 segments
5 kiwi fruits, peeled, sliced
3 oranges, juice of
1 lemon, juice of
1 1/2 tablespoons sugar
4 fresh mint leaves
Place peach and kiwi slices in a medium bowl.
Add citrus juices and sugar to taste.
Stir very gently to blend.
Place mint leaves on top of fruit and chill several hours.

Freezer Peach Pie Filling
Cook Time: 55 Minutes Ready In: 3 Hours 10 Minutes
Yields: 8 servings
"Peach filling is prepared ahead of time and frozen inside a pie plate. When ready to bake, simply place it in a crust-filled pie plate of the same size, and bake."
INGREDIENTS:
2 1/2 cups sliced peaches
3/4 cup white sugar
1 tablespoon cornstarch 1 tablespoon MINUTE Tapioca
1 dash Dash of nutmeg
DIRECTIONS:
1. Place sliced peaches in a bowl with sugar, cornstarch, tapioca, and nutmeg. Toss until evenly coated and sugar is mostly dissolved.
2. Transfer peaches to a 9 inch foil-lined pie plate. Cover with another piece of foil and freeze immediately to prevent peaches from discoloring. Once frozen solid, remove peaches from pie plate, with foil, and transfer to a zipper locked plastic bag for later use. When ready to use, line a pie plate with prepared crust and place frozen peaches on top.
3. Preheat oven to 450 degrees F (230 degrees C).
4. Bake in the preheated oven on the bottom rack for 20 minutes. Lower heat to 350 degrees F (175 degrees C) and continue baking for another 30 to 35 minutes, or until completely warmed through.

PEACH COBBLER
6 large peaches, cut into thin wedges
1/4 cup sugar
1 tablespoon fresh lemon juice
1 teaspoon cornstarch
For biscuit topping
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
3/4 stick cold unsalted butter, cut into small pieces
1/4 cup boiling water
Cook peaches:
Preheat oven to 425°F.
Toss peaches with sugar, lemon juice, and cornstarch in a 2-qt. nonreactive baking dish and bake in middle of oven 10 minutes.
Make topping while peaches bake:
Stir together flour, sugar, baking powder, and salt. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal. Stir in water until just combined.
Remove peaches from oven and drop spoonfuls of topping over them. Bake in middle of oven until topping is golden, about 25 minutes. (Topping will spread as it bakes.)
Serves 4.
Also try your peaches in wine.......delicious!

peach shortcake
1 container of biscuits- cook according to directions
slice up peaches and sprinkles with sugar
slice open biscuits, put peaches on top and a whip cream
put on the top to the biscuit add more peaches and more
whip cream
a leaf of mint for garnish
