It's still the same colour.
Ejaculate is white because it contains glucose, whether a guy has had a vasectomy or not.
A vasectomy severs the tract between the testicle and the prostate, which is where the sperm (produced in the testicles) and semen (which is white) are mixed.
After a vasectomy, the semen is still able to get to the prostate (and out the urethra), but it contains no sperm.

There should be no difference in color if they are healthy to begin with.The volume of sperm usually only consists of 5% of the total semen volume, so ejaculate is about 95% of the prevasectomy volume, and no one could detect that small volume change unless it was measured quantitatively with chemistry volume measurement ware.
