Homemade macaroni and cheese is an American classic and a true delight. It's also easy to make - forget that stuff in the blue box! This recipe serves about four.
Ingredients:
1/2 pound penne pasta
1/2 cup butter
3 tbsp. minced fresh onion
1/2 tsp white pepper
1 1/2 tbsps flour
1 tbsp Dijon mustard
1 1/2 cups milk
1 cup grated Gruyere cheese
1 cup grated cheddar cheese
1 cup grated Parmesan cheese
1/3 cup bread crumbs
Steps:
1. Heat the oven to 350 degrees.
2. Use a Stockpot and boil the pasta in plenty of salted boiling water until tender. Drain and reserve.
3. Meanwhile, melt 1/3 cup of the butter in a saucepan over medium heat and add the onion. Cook for two minutes.
4. Add the white pepper and flour. Cook, stirring constantly, for three to four minutes. Don't let the flour brown; lower the heat if it does.
5. Add the mustard and milk and bring to a simmer.
6. Simmer for 10-15 minutes. The sauce will thicken. It should be very thick but not gluey. Add more milk if it thickens too much.
7. Once the sauce has simmered for at least 10 minutes, add the cheddar and gruyere cheeses and half the parmesan.
8. Shut off heat and stir them in. Stir the cheeses in as they melt. Return the pan to low heat if necessary.
9. Working quickly, toss the pasta in the cheese sauce. Toss it well so the sauce gets inside the pasta tubes.
10. Place the pasta in an 11- by 14-inch glass or ceramic baking dish.
11. Sprinkle the remaining parmesan cheese over the top.
12. Melt the remaining butter, stir it into the breadcrumbs and sprinkle this mixture over the top of the pasta.
13. Bake for about 30 minutes or until the top is golden and toasted.
Tips:
Try experimenting with a variety of cheeses. Just about any meltable cheese will work. Some recipes call for all cheddar cheese, others use varieties like asiago, romano and gorgonzola.
You can use any small pasta shape that has holes for holding sauce, like ziti, pinwheels, or elbow macaroni.
You can also add cooked vegetables to your macaroni and cheese: mushrooms, broccoli florets, and peas are all possibilities.
To make your own bread crumbs (much tastier than the kind you get in a can), cut the crusts off a slice or two of white bread and process in the food processor until fine. Voilà.

Cook the macaroni until it's almost done, not so raw you can tell that it's not cooked, but a little chewy. Then drain it, but don't rinse. Turn the stove down to LO and put the macaroni back into the pot. Here are some good cheese combos:
parmesean to shredded provolone
American pre-packaged to Kraft cheddar
Just plain ole Velveeta cheese
Mozzerela, Swiss, Provolone, and a few shreds of munster
These can be good as-is, but it's always best to add 2-3 tbspoons of 2% or whole milk (anything less makes it gross) per 4 servings. (each serving in reality, not that "2 oz" stuff, is about 3/4 cup or so)
It's even better if you leave the macaroni a little more uncooked, put it in a casserole dish, sprinkle bread crumbs on top, and pop into the oven on 325 for about 10 minutes, or until the top gets "crusty". If you're serving it to alot of people, leave the macaroni in a crockpot after it's about 3/4 cooked, put the setting on warm or lo, and then add your cheese. Put a lid on it and in about 30 minutes you have great mac and cheese. Be sure to serve Peanut butter sandwiches with it!! Yumm Yumm Eat 'em up!

Macaroni and Cheese
8 T. butter, divided
6 T. flour
3 3/4 c. hot milk
4 c. shredded sharp cheddar cheese
1 lb. cooked short macaroni
salt and pepper to taste
1/4 c. fresh bread crumbs
1/2 c. heavy cream
Cook pasta according to box. Drain and set aside. In large saucier over LOW heat, melt 6 T. of the butter and add the flour, stirring constantly for 3 to 4 minutes. (Make sure you let the flour bubble and foam. If it doesn't, then your mac and cheese will have a "raw flour" taste.) Turn heat up to med/high and add your hot milk, 1/2 cup at a time, and whisk constantly until thickened. Stir in 2 cups of the shredded cheese and cook, stirring constantly, until the cheese is melted (1 to 2 minutes). Remove from heat and stir the cooked macaroni into your sauce.
Butter an 8 x 11 baking dish and spread 1/3 of the remaining shredded cheese on the bottom. Add 1/2 of the pasta and sauce mixture, then another 1/3 of cheese, then more pasta. You should have five layers total: Cheese, pasta, cheese, pasta, and finally, more cheese. Mix the bread crumbs with the remaining 2 T. butter (melted) and sprinkle on top of the macaroni and cheese. Pour 1/2 cup heavy cream over casserole and bake in preheated 350 degrees oven for 30 minutes, uncovered. Let macaroni and cheese sit for 15 minutes before serving.

You rasp the cheese or cut it into ver small pieces.
Then you put the macaroni in plenty of water - because macaroni swells when it is boiled.
Into the water you put very little salt - as cheese is usually salty. You also add a teaspoon full of oil. Sunseedoil will do.
THen you boil the macaroni (without the cheese) for 8 minutes. So it should boil for 8 minutes.
Then you poor of the hot water and add the cheese. Keep stirring so it does not burn - keep on a low fire untill the cheese is melted.
If you have a microwave you can also put the macaroni underneath the microwave with the cheese on top of it.
Try 3 minutes and see if the cheese is melted.

8 ounces macaroni
2 lbs shredded sharp Cheddar, mild, mozzarella cheese
2 eggs beaten well
3 cups milk
1/4 cup butter
2 1/2 tablespoons all-purpose flour
2 tablespoons butter
1/2 cup bread crumbs
1 pinch salt and pepper
Once you let the noodles boil for about 10-15 mins when water is boiling. Turn off the stone and let the noodles sit til mid soft. Drain and rise with cold water and put aside. Then cut the cheeses up into small cubes. Combine the milk, eggs and flour together and beat well. Pour noodles into a deep 3 inch pan and combine cheese into noodles then combine the egg, milk and flour mix. Add salt and pepper into mac and cheeses and combine all together. Turn the oven on 300 the get warm the once it hot enough then turn the oven up to 350 and place the baking Pan in oven for 20-35 mins til cheese has melted. Then once the cheese has melted. To the baking pan top off and turn oven down to 275 and let brown. Once brown take out and let cool off.

I don't make home made macaroni & cheese or do I! I make my macaroni & cheese here at home. So maybe it is home made.
I buy my Macaroni & cheese in a package. It's net wt is 7.25 Oz. I usually buy these dinners at 5 for a $1.00 at almost any store. It doesn't matter what brand I buy as long as it's cheep. They all taste good and are fast and easy to make. I just follow the cooking directions directions on the back of the box.
#1. Stir macaroni into 6-8 cups boeling water.
#2. Boil rapidly 7 to 10 minutes until macaroni is tender.
#3. Drain Macaroni.
#4. Add 1/4 cup of butter or margarine, 1/4 cup of milk, and contents of cheese packet.
#5. Stir until smooth and creamy. Season to taste.
This yealds approximately 3 cups (3 to 4 portions).
There is also directions to do by microwave.
This is the way I make my home made macaroni and cheese. And it is soooooooooooooo goooooooooood!

You can make your own white sauce and add cheese, but the easiest way would be to buy a ready made bechamelle sauce (Dolmio do a good one) and add a variety of your favourite hard-(ish) cheeses, grated. Mix it together with some macaroni, although you can use any pasta shape you care for. Then grease an oven proof bowl, pour the above into it and add some more grated cheese to the top - I also find some breadcrumbs add a nice crunchy top. Pop it in the oven until top layer is golden brown, and all cheese has melted...probably not the most culinary sound advice you have had, but it is quick, easy, and you can't mess it up !!

Boil the macaroni for 7 minutes. Use sharp cheddar cheese and colby jack cheese , 2 eggs, pepper, a little cream and milk. Layer a buttered dish with macaroni, then cheese. Use plenty of cheese. Mix eggs, cream and milk together with the pepper. Pour over the layers until the liquid can be seen, but not over flowing. Bake in a 375 degree oven about 20 - 30 minutes or until the liquid is solid. Let it stand 10 -15 minutes before serving.

First, pick out the type of noodles you would like to use. Cook the noodles according to package instructions. Drain the noodles. You don't need the water. Next, cut up your favorite kind of cheese. It doesn't matter which kind you use even if its sliced cheese. As long as its your favorite cheese. Add 2 tablespoons of butter to noodles. Stir until mixed together. Don't break up the noodles, keep them whole. Next, add about half a cup of milk to the buttered noodles. Now add your cheese. Mixed until everything is melted and creamy. You now have made some delicious homemade macoroni and cheese!

First, make cheese sauce - shredded cheddar cheese, butter, milk, a little flour, salt and pepper. Keep stirring it so it doesn't get clumpy. Take boiled elbow pasta and pour the cheese sauce over it. Mix it thoroughly with a spoon and dump it into a baking pan or bowl. Go online to check for exact measurements of the ingredients, though. It should be really good. You can even add bread crumbs on the top for a crunchy texture. (Just keep it covered while it bakes for a half hour or so, and then remove the foil about ten minutes before it's done or until it's golden on top.) Oven should be about 400.
