The proportion of the sulfur containing amino acids is somewhat higher in the yolk. There is no free (elemental) sulfur in either the yolk or albumin.

I am not clear what you are asking. Nearly all of the Sulpher is contained in the yolk. The albumin is protein and water. The yolk is mostly fat and contains the Sulpher, vitamins and minerals.
