Since I don't know what genre of book you want, or even whether it must be fiction or non-fiction, I'll name some standard classics. (I was going to say Of Mice and Men, but that's a bit too short.)
-To Kill a Mockingbird by Harper Lee
-Uncle Tom's Cabin by Harriet Beecher Stowe
-The Good Earth by Pearl S. Buck
-The Grapes of Wrath by John Steinbeck
-Of Human Bondage by W. Somerset Maugham
-The Sun Also Rises by Ernest Hemingway (or another novel by him)
-Tender is the Night or The Great Gatsby by F. Scott Fitzgerald
-Mrs. Dalloway by Virginia Woolf
-The Fountainhead by Ayn Rand
-Les Miserables by Victor Hugo
-Crime and Punishment by Fyodor Dostoevsky
-The Count of Monte Cristo by Alexandre Dumas
-Frankenstein by Mary Shelley
-My Antonia by Willa Cather
-The Scarlet Letter by Nathaniel Hawthorne
There are many more that could be suggested, but hopefully this will help you.

Read Dune. Seriously, most teachers don't want to actually check to make sure you read it.

you can try reading the Harry Potter Series, or the Twilight Series: and every book in the series is over 200 pages
Twilight ( 400-600 pages) = 3 books
Harry Potter ( 300- 700 pages) = 7 books

Fiction or non-fiction? For fiction, I'd say Six Faces by Ryan Callaway, as there is so much that goes into it that you could probably write a great piece on it. Or, if you want to go more classical, you could do one on The Oath by Frank E. Peretti... maybe the Crucible (if it's long enough, though I doubt it.) Six Faces is 289 pages, and the Oath is about 500. I hope you do well!
