Your best chance would be at a hotel that you can enter from the back. Bellagio doesn't have an entrance to the rear of their property, but you can get to the Mirage or Caesars from Industrial Road, or Monte Carlo, NY-NY, Excalibur, Luxor or Mandalay Bay from Dean Martin Drive. On the other side of the Strip MGM, Paris, Planet Hollywood, Ballys, Flamingo, Imperial Palace and Venetian are accessible from Koval. But even if you use the back entrances it'll be crazy on the Strip New Year's Eve.

Tip the valet enough and you usually can get a parking place, e.g. $20. The Strip will close traffic though at 6 so you would have to go thru the back door and The Fashion Show mall will have some spaces for rent for $50.
Best idea, park somewhere close and take a cab; just remember where you parked.

Park wherever you can find an open garage and do it before 6pm. The strip will close by 6pm. You won't be able to move the car until after 12:30am (approximately), the strip will reopen between 4am and 5am. So plan for a long evening of parties or get to know the back roads! Unless their parking garage or valet is full - then the priority will be given to those staying at the hotel. Just don't plan on moving the car anytime soon since the Strip will be closed to traffic at a certain point tonight.
