If the deadline for Stanford says 1/1, does this mean that I must turn in the application by 11: 59 pm on 12/31 or 11:59 pm on 1/1?

If it just says it is due on 1/1, I would read it to say that they would have to receive it that day, probably by the end of the workday at 5 p.m. If it says it has to be postmarked by 1/1, then you could send it in by 11:59 on 1/1, although I think you would have trouble finding a post office open on that day.
