Remember when they first started to make movies, almost all of the actors were from the theatre, where they had to be very theatrical on stage, and this was brought to the big screen..

That's really an interesting question, and here's my interesting answer.
Centuries ago, sleep walkers were considered to be 'possessed' during their night wanderings. I have only seen one once, and they look scary with their unseeing eyes wide open, their strange goose-step walk, and their arms straight out in front of them. The image was so suited to 'monsters' that the movie makers couldn't resist such a weird image, and adopted it.

They're all pretty slow, so it seems to me that they're trying get the person they're chasing quicker. It would take like, 5 more steps to catch their prey and they're too stiff and slow to risk the dinner from escaping.
