I used to work in a factory where they made the candied fruit that goes into fruit cake as well as maraschino cherries (the red ones that go on top of ice cream). You would not believe the process. Just let me say that the candied fruit used to be real fruit and maraschino cherries start out either white or yellowish in color and very sour. When the process is finished they are red and sweet.
Believe me, the processes involved seem more like chemistry projects than a food processes.
Happy New Year!

I think it depends on how it's made. Most commercial fruitcake is very dark and dry and has the mysterious sweet green and red chunks (candied citron) that looks gross. If I was ever in the mood for a fruitcake.....it would have to be very moist, have a buttery flavor like a pound cake, no candied citron, and full of real fruit and nuts.

My grandmother makes a home made fruit cake at Christmas every year. It is pretty as a picture.in fact she took a picture of it one year and my mother objected but she snapped a picture before anyone cut into it. It has colorful candied fruits and nuts and it is baked in a bundt pan.
