Are there any air conditioning options inbetween window units and central air?

ductless mini-splits are becoming more popular and a lot of them are running R-410a (a higher pressure, more efficient and "environmentally friendly" refrigerant)
LG makes a line called "Art Cool". They are very decorative and even camoflague as picture frames and stuff. Mini-splits are installed quicker and you dont need ductwork. Check em out and decide for yourself.

Yes, you can get a ductless ac system. They are more efficient than window units and cheaper than central units. For more info, check out the ductless ac page at my source.

Not really. If you already have ductwork in place, central air is fairly easy; if not, that runs up the cost considerably.

I've seen air conditions that just sit in the room and/or are on wheels.

Yes there is a stand alone a/c that you can move room to room. I found one last year for about $350. at Wally World.
