Here are three good links. Pictures, etc, of medeival castles and abbeys.
When my daughter had to do a pyramid for school, we went to Lowe's and got some stryofoam insulation boards. These are big pieces, 3 ft x 18 inches 1 inch thick, of styrofoam. It's easy to cut into any shape at all, and glues together with either hot glue, regular old Elmer's or spray adhesive. To give it extra strength we used round toothpicks to secure the edges (just like you'd use nails). To give it a stone look, we helped her mixed sand with paint and painted it, scratching the lines (edges of the stones) into it before it was fully dried. She got a very high mark, and it was very inexpensive.

They are rebuilding one in France using the old medieval methods. Here is a map of the castle (11th century model). You have a curtain wall, towers, and one square building inside which is the lord's quarters. The main entrance was between two towers for protection, and there was a smaller door at the back (called poterne on the plan). One tower (upper left on the plan) had the chapel where the lord and his family listened to mass.
Later on castles became more complicated.

You have drawings and plans on this page, don't bother about the French text. The pictures say it all. Click on the plan to have a bigger picture.

use cardboard, and cover it with modeling clay to look like stone block. the key elements are going to be your central keep tower or donjon. Use a large oatmeal canister,or cracker box depending on weather you want square or round towers.a courtyard surrounded by a defensive wall with towers and a gatehouse. make the towers out of pringles cans. as i said earlier cover the whole mess in modeling clay and make lines in it so it looks like stone. don't forget a moat and drawbridge...good luck.
