Yes, go to Circus Circus Adventure Dome for the day. You may also want to take the rides up 101 stories on the Stratosphere or the rollercoaster at NYNY.
Eat at a buffet where everyone can chose their favorites and they allow minors. Restaurants on The Strip can be very pricey.

Watch a magic show. World's Greatest Magic at the Greek Isle or Extreme Magic with Dirk Arthur at the Tropicana would perfect, if you can afford it. If you don't have that much money, you might want to just walk the strip and maybe ride the monorail.

Ride the extreme rides at Circus Circus, dine and ride the three super extreme rides at the Stratosphere Tower, See the Lights Show at Binion's during midnight, Eat at the "Eiffel Tower" at Paris and watch the pirate show at Treasure Island. ( Check the showtimes for the pirates show, and make sure it isnt raining and very windy because there is hot fire involved! Check it out, its awesome!)

If you can afford to go to one show .. go to the dinner show at the Excalibur called the Tournament of Kings. They serve dinner with no eating utensils so you have to eat with your hands ... You are encouraged to yell scream and pound on your table to cheer your king on to victory. It is a great show for everyone. Not badly priced at a bit over $50 each but it does include dinner with the show. I would suggest you buy your tickets now because the show usually sells out. You won't be dissappointed in the show.
