How about a night-time ascent of Slioch, A' Chailleach or Ben Nevis itself? Time it well and you could have a couple of nips of the good stuff to 'see the bells in' at the summit.
Of course mixing alcohol with the hills is not normally advised, but we're all adults here aren't we?
For something more productive, why not add a new stone sculpture to the piles of cairns on our mountains - a Canadian style inukshuk, for example, would be an interesting and surprising addition.

You could get a return ticket to New York, fly on New Year's Eve so that you miss it in Scotland, then fly back before New Year's Eve reaches New York so you miss it there. You will be able to say 2007/8 you didn't see the New Year in anywhere - there's a novelty!

It would help if you could establish some guidelines to help us answer your question, because I could say "how about clubbing baby seals to ring in the new year?" It's different, but is it something you would be interested in?
How about square dancing?
Barn raising!
Ring in the new year with ice sculptures!
Use dryer lint to erect a statue of Val Kilmer, perhaps?

If you live near a pond or river, or better yet ocean, run in there naked and go woo-hoo! right at midnight. That is the most exciting and different thing I can think of.
