I am building a new computer and the motherboard that I am getting supports DDR2 800 1.8v ram. The ram that I was looking at is G-Skill ram. It's voltage is 1.8-2.0v. It is also not on the "supported memory brands" list. Will it work?

Generally, brands do not matter too much on newer boards.

But, you have DDR2 which is a newer technology and some motherboards are still finicky as to what brands they support.

Specifically the AM2 socket on ASUS motherboards.

G-Skill is usually a brand that would be on the Supported memory list, but if it is not you are taking a chance that the memory will cause issues.

I would look up your motherboard model on a site that has customer reviews such as newegg.com. See if anyone else has problems with that brand of memory.

i would say yes although im not an authority on these type of things. Im guessing the supported brands are brands whom the mobo company has links with. Therefore promote those companies so that you spend money buying those supported brands. In return the RAM company will pay the mobo company for this privelidge

the brand will not matter as long as the specs are the same.

There are alot of unbranded memory that is just as good as the branded stuff.
