Producing shows off-off-Broadway- where theaters have 99 seats or less and shows typically run for less than 20 performances- is not a way to make money.

The best-and only- reason to do it is you have a love of theater, and a passion for working with new, undiscovered actors and playwrights.

The typical sources of income for such a producer are either secondary day jobs (or maxing out credit cards) or (if you can get them!) private and government grants.

For an off off Broadway show, a producer is most likely self-employed meaning there is no union and no fringe benefits. The pay would depend on how much money the show makes. The hours are very flexible. You will have a full plate of things you have to do and you will need to get them all done in a timely manner. If you don't do them all, your show will not go on.
