The Panama Canal. Leading the Rough Riders in the Spanish American War (San Juan Hill). He was an enthusiastic president, who has influenced many others, mostly with the phrase "Walk softly and carry a big stick." Was the youngest President of the time, at 42. JFK took that some 60 years later. That's about all I can think of.

He also had a big influence in setting aside land for national parks so people could enjoy them in the future, like Yellowstone.
