It can be spelled either way. Both are acceptable in the US. Gray is the more common here. In England "grey" is more common. This question was asked about 3 weeks ago. I checked the Websters Dictionary then and there were answers from the UK.
By the way if you are talking about hair, the same rule applies because you are describing the color of the hair.

they are both correct. personally i spell it grey, but gray is correct too.
As for names, there are people with both spellings as well. But there you need to get it correct according to that individual.
