According to the Free Online dictionary,
Sex is usually a noun.
In slang, if you want to dress sexily, you can get "sexed up," so there it is a verb. Or apparently you can "sex up" someone by sexually arousing them. That is also a verb usage.
There is also a rare non-slang usage: To determine the sex of something, as in "I sexed the puppy litter and found two males and one female."
I guess you can learn something every day. I would have thought it was only a noun!

can be either, depends on the context
edit:
then again, it may just be a noun. for example you dont say
"I want to sex you"
so if you said "have sex with you" HAVE is an irregular verb, and sex is still a noun. so its a NOUN and a noun only.
