The Fray did all sorts of covers and I think some of them are in fact better than the original for example:
The Great Beyond (orignally by R.E.M.)
Hips Don't Lie (Orignally by Shakira...yes The Fray did do this song!)
Have You Ever Seen The Rain? (I don't know who this is orignally by but The Fray did an amazing cover)

I think James Taylor's cover of "How Sweet It Is" is better than Marvin Gaye's. I don't know if you consider that an oldie or not, though.

Yes, the Commitments did several, and Robert Plant's "Sea of Love" was a definite improvement.
