Shop to you drop town. Every major Strip casino has a shopping area from Caesar Palace Forum Shops with the coolest escalator to third floor, Venetian shops, etc. There is Town Square (new) just past Mandalay Bay plus an outlet mall at the far end of Las Vegas Boulevard South (about 3 miles past MBay) and another Downtown. And there is the Fashion Show Mall next to Treasure Island, Boulevard Mall on Maryland Parkway and Desert Inn, and the Meadows Mall just off 95 at Decatur.
Other cool things to do - there are museums like Madame Treaseau, Test Site near UNLV as well as Natural History Museum, the new Springs Preserve off 95 at Valley View, Stratosphere rides 101 stories up, rollercoaster at NYNY. Even if you don't gamble, walking and sightseeing through the huge casino/hotel complexes is fun in itself. Many of the famous hotels on the Strip offer free entertainment and shows. My favorite free show is the Parade in the Sky ceiling parade w/a Mardi Gras/Carnival theme at the Rio.There are a lot of good shops and restaurants in the hotels. Caesars Palace and The Aladdin have good shopping arcades. There's also a mall on the strip-I think it's called the Fashion Show Mall.
If you like scenic attractions, you can go to Red Rock Canyon just west of the city or Valley of Fire State Park about an hour northeast.Both have spectacular rock formations and awesome scenery.

I would recommend going to the Forum Shops at Caesers and the Fashion Show Mall across from the Wynn. They are both amazing malls and have every kind of store you can think of. Just be sure to bring lots of money, those stores are high dollar. The Venetian has the Grand Canal Shoppes that are good too.

There are shows and tours if you want to do that? There is also shopping and lots of it. Eating of course is always a plus in LV. Go see the show "O"..... it's really really good!!!

You will never be bored in Las Vegas. Not only is it affordable, and very luxurious but full of activities. You don't have to gamble or have a lot of money to have a great time.
