I have several different sets that have the couplers that look like prototypical knuckles, but I don't know if they're all meant to uncouple over a magnet....and can I use a standard magnet, or does it have to be electrically charged?

I work mostly in N-Scale, but have subscribed to "Model Railroader" magazine for several years now and have seen several brands of magnetic couplers.

Just as an example, I use "Micro-Trains" Magne-Matic couplers: http://www.micro-trains.com

I use a mix of solid-magnets and electromagnets on my layout.

Here's a link to the NMRA, they might have more info: http://www.nmra.org/#railway
