MRE stands for Meals Ready to Eat and that is exactly what they are: meals that can be eaten at room temperature as soon as they are opened. They a prepared and packaged for long term compact storage and thus have as much calories as can sustain a person on 3 meals a day.
Astronaut meals are more like freeze dried camping meals - they are intended to be reconstituted with hot or cold water, in the package rather than in a pot as camping meals are and consumed in a zero gravity environment so they either stick together or are contained (soup, juice, etc.) Great attention is paid to reducing the output from meals (gas, urine, bowel)..

I'm not really sure about the military MRE's but I remember reading somewhere about freeze drying ice cream for astronauts.
