Sugar is a complex compount, so when it is said as carbohydrate, people mean glucose (C6H12O6)- the simplest form of sugar.
Glucose (C6H12O6) contains six carbon atoms one of which is part of an aldehyde group and is therefore referred to as an aldohexose.
So to distinguish sugar from other hydrocarbons, we just look at the functional group it belongs to.
