I have an item listed with one bid and I decide I no longer want to sell it.
How do I cancel it (if I can)?

You can only withdraw an auction for certain reasons. Check the "help" page for acceptable reasons. You can't just withdraw an auction because the auction didn't reach the price you wanted, that's why you set a reserve price. Good luck.

You should try to contact the bidder and negotiate first. You could ask the bidder to retract the bid. If there are bids on the item you can't alter much but if there are no bidders i'm sure you are able to end the listing and remove it.

Very Friendly speaking, Tell your friends to bid on your item with some special rate. No one will make that much big volume of bidding. and this way u may not sold the item. and even u may go with UPI.

If more than 12 hours remain, you can cancel a/any/all bids on your item:

If more than 12 hours remain, you may end your listing early with no bidders under certain conditions:

You may end a listing early and award the item to the current high bidder as well. FYI.

I am not sure but, I would think you could cancel the auction. I believe there is a community place on the site like a chatroom. I would go there and ask someone to be sure.
