It depends but, in general, vacancy diffusion will be faster because the energy required to occupy a vacancy site is less that required for an interstitial site. Basically, an atom has to be small to fit into an interstitial site. Grain boundary diffusion is faster yet (typically) because that is where the disorder in the lattice is high so it is easier for atoms to move around.
