Policy work at some place like the Brookings Institute or Council on Foreign Relations, international NGOs (you would need French and one more language for the UN), and as someone mentioned, the foreign service (very hard to get into, though). If you are considering graduate school, Georgetown, Columbia and Tufts have good related programs.

If you're from the United States, you could take an exam to work for the State Department and work at an embassy.
If that appeals to you - it did to me at one point - know that the State Department recently changed its requirements to place employees in hardship posts more often. Something to be prepared for.
