The healthy bladder can hold a liter of urine. That's a bit more then a quart.
The "Straight Dope" points out
" If your bladder gets too full, the fluid can back up into the kidneys, leading to potentially serious medical issues. Kidneys work by a pressure differential system involving a fine network of capillaries and tubules, and fluid backup will make them less effective at filtering your blood. Depending on how high the back pressure gets, your kidneys could be damaged. The area at greatest risk is the kidney's central collection region, the pelvis and calyces, which may become dilated, a condition called hydronephrosis. Another risk from high bladder pressure is kidney infection due to bacteria forced up from below, called pyelonephritis.
But don't worry... you'll let go long before back pressure can do any real harm."

As for bowel movements, not going can lead to becoming impacted. That's when too much liquid has been extracted from the stool and a blockage has developed. That will lead to diarrhea and other stuff.
Generally people can go 3-4 hours between bathroom visits. While I've often heard the claim "It's bad if you hold it." there doesn't appear to be any support for it.

One possible way it could go is that You can no longer remove excess water from Your blood, thus leading to electrolytes in Your blood plasma being overly-diluted and then possibly severe hyoneatremia will develop. Which is potentially fatal - but it is rare for that to happen. You'd have to drink like three litres in one go and then not urinate at all.

Nothing really, except it becomes painful and you might wet yourself. If you constantly do this, it can lead to infections of the kidneys, bladder and eventually toximia.

You may damage your kidneys and contract an urinary tract infection. These are common problems in cab drivers.

You will pee your pants for #1, but you can eventually get colon cancer from holding a #2 so don't do that.
