Uplift= density diff (air-helium)*Vol (displaced air)
density air= 1.2Kg/m^3, density He=0.2Kg/m^3
So uplift= 1kgf/m^3 of He
You would need a mininum vol of 70m^3 He to raise a 70Kg person at stp., assuming mass of balloon skin= negligible.
That's about 5000x30cm diam He balloons.

It depends on the size of the balloon. The question you need to ask is how much helium does it take to lift a certain amount of weight, and then add the weight of the balloons, the person, and all the ropes and apparatus needed to hold the person. Then ,determine the volume of helium a balloon will hold, and do the math. Helium has a lifting force of 1 gram per liter of gas.
A man did this in 1983 and he floated to an altitude of roughly 16,000 feet

They tried to do this on MythBusters, and they figured out that it was impossible for anyone to get lifted off the ground by balloons, so much for the average person. Unless it was for something really small, I think it was somewhere in the thousands.
