Ammonium nitrate does NOT explode when ignited, contrary to popular belief. In fact, it will not even burn. It only explodes when initiated to undergo detonation by a sufficiently strong hypersonic shock wave, such as that produced by blasting caps.
Regarding fun things with rockets, search for amateur ammonium nitrate rocket sites. Usually they use magnesium as a fuel. However, ammonium nitrate is harder and harder to get nowadays, and there are better rocket fuels.
