I was deep-frying papad made from mung bean and some black pepper in safola(brand's name) oil (containing edible Blended edible Vegetable oil which is a mixture of rice bran oil and kardi oil in ratio 3:7),...after frying i saw that the oil had turned black and got converted into jelly.......Can u tell WHY it happened

This may happen due to reasons like :
- Impurities in oil ;
- some of the ingredients of Papad might have separated and formed jelly like material with oil ;
- or the quality of the oil may be not proper.
- Overheating of the oil might have resulted in precipitation of residue looking like jelly.
Care for quality of edible fats and oils during transportation and storage is especially important for partially or fully refined products. This paper describes some examples of deterioration caused by a brass sampler, by improper reheating during voyage, by contamination in a pipeline, and by absorption of oxygen during various processing steps. Trade associations have published recommended procedures to minimize some of these problems. From these recommendations and many personal experiences, PORIM has drafted a “Code of Practice” bringing together elements of good design of physical facilities and of good operating practices. A copy of this code appears as an appendix to this paper.

My guess is that the oils being used were unsaturated oils (having 1 or more double bonds) so at a high enough temperature these bonds open up and form crosslinks to adjacent oil molecules. Depending on how extensive the crosslinks are, the final material can be anywhere from jelly to rock hard solid. The process is roughly like what is done to raw rubber to make it into tires etc. Perhaps the frying temperature was too high (a lot of the asian dished need the oil to be smoking hot; so hot it's almost about to catch fire). Or, maybe there was some substance in the ingredients that facilitated the reaction?
