If the person is of Latin descent, it's second nature.

For others of non Latin descent, hmm time for the funny farm

People are used to talking with their hands in real life so when the talk at all even on the telephone they must talk with their hands to convey theirt message properly

I think that the reason would be habit. I think most people know that the other person cannot see them.
