Have you tried any other expansions or add-ons besides cities and knights? If so, what're they like?

I usually play with Settlers, Seafarers, and Cities and Knights together. Seafarers is great and is a very simple addition to the game-there are very few new rules (whereas Cities and Knights has a lot). Basically, Seafarers adds exploration to the game. Of course, I never use the set-ups described in the manual. We just set up the board with an island to start, place all the extra tiles face-down, and when you place a ship or road to an unexplored hex, you randomly uncover one and place it! Good times.
Also adds gold to the game, which is a lot of fun to look for.

The expansions which add more players neither complement nor detract from the game. It's just the same game whether for four, six or eight. The other expansions make the game more complicated and my friends enjoy them but the expansions didn't impress me. A German magazine just published a Fishermen of Catan variant and that was okay.

I like Settlers of the Stone Age better than the orignial. It gives a theme to the game and you have more options/things to build and consider.
