Can someone explain how to do that please?

Insert your needle in the edge stitch of one part of the knitting, pull a loop through, insert in the other piece, pull a loop through. If the seam needs to be very tight, you pull the loop immediately through the old one on the needle, if you have a little space, yarn around the needle and pull through.

And if your panels are a bit on the narrow side you can beef-up the seems a bit by making an extra stitch or two between the knitted parts.

You can even put both pieces of knitting on top of each other and insert your needle through both layers, pull up your loop, and make half or whole stitches that way.

You can use yarn thinner than the knitting yarn or the same size. Same colour for nearly invisible or contrasting colour for decorative seems.

single crochet through each block...i personally don't like how it looks and would rather sew it...hold blocks together and hook yarn through each side...hard to explain in writing..
