Melanin--it gives pigment not only for your eyes, but your hair color and skin tone. The more melanin, the darker your eyes, hair, and skin are. Blonde-haired, blue-eyed people have little melanin while brown-eyed brunettes have more, and albinos produce virtually no melanin.
Genes dictate how much melanin to deposit in the iris.

There are however, people with violet eyes, like actress Elizabeth Taylor. They are very rare of course. 'Red' eyes are also found in an extremely small (<0.001%) percentage of the world's population.

It's a matter of genes. Certain genes are dominant for eye color, while others are recessive. From what I remember in genetics classes, genes for blue eyes are recessive. The resultant eye color of the offspring (F2) from the F1 crossing is largely dependent on the dominance of the F1 eye color genes.

Just wait till New Years Day to see a lot of people with red eyes and even some with black or black and blue eyes... :)

With the use of genetics and melanin. The genetics of our eye color comes from the ancestors. The melanocyte count on our iris are genetically maintained (especially with the pattern within the iris)
